Beer Pickled peppers

Today was a baking with Beer day! I made Beer Bread to go with the Ham and 16 bean soup in the Crockpot, which meant I had some Beer open to be used up. Peppers in my garden that need to be pickled made that easy to do…besides it was to early for me to just drink it…unless I was on vacation…which sadly I’m not…hence the pickled Peppers, funny how things work out!


2 tbs sugar
1 tbs salt
½ cup vinegar
2 tbs water
1 cup beer (use a good beer you like to drink)
6 large peppers thinly sliced
3 large garlic cloves


In a saucepan over medium high heat, add the sugar, salt, vinegar and water. Stir just until the salt and sugar have dissolved, remove from heat. Stir in the beer, pour into a jar.
Refrigerate until cold, about 20 minutes.
Add the jalapenos to the jar, replace the lid and refrigerate for at least 24 hours.
Jalapenos will last for several weeks.
