- One Medium Onion.
- One celery stalk, finely chopped.
- 3 cloves of garlic.
- One TBSP Olive Oil.
- 8 – 10 tomatoes.
- 1 can tomato paste.
- 1 tsp salt.
- 1 TBSP sugar.
- 1 bunch fresh Basel.
- 1 bay leaf (pull out before serving)
- 1 tsp Oregano.
- 1 tsp thyme.
- Meat of choice, today I’m using sage sausage because that is what I have on hand. (Hamburger, sausage, or combo of the two)
Put olive oil in large sauce pan and saute onion, celery and garlic until onions are transparent. While onions are sauteing, blanch tomatoes when cool enough to handle, peel and dice.
Add tomatoes to onion mixture, add the tomato paste and all the spices, and put on low while you brown your meat.
When meat is cooked and browned, add to sauce.
let simmer on low heat for at least 2 hours, I let mine go all afternoon.
Cook your Spaghetti.
